Revani ”, refers to the flavorful Greek semolina cake, made with syrup. This recipe comes from Veria, a town on the Greek mainland, which is the best destination for the authentic “revani”.

This dessert has been adapted to many Mediterranean and Middle Eastern cultures, including Turkey, Egypt, Israel, Jordan, and in Arabic cuisine, to name a few. It is called "basbousa" in Arabic and "shamali" in Armenian.

In Greek cuisine, revani is one of the most widespread desserts, both in restaurants and at home. It is typically served with a scoop of vanilla ice cream on the side!

Portions: 6-8 portions (starting point in a deep baking pan of 40X30cm)

Ingredients:

For the syrup:

* glass = water glass (220ml)

Preparation:

This traditional Greek cake takes only 7 steps to make which are:

  1. Preheat the oven to 180 C.

  2. Start by preparing the syrup: add the sugar to the water in a deep pan and let it boil for about 3-4 minutes. Set it aside and let cool.

    Tip: Add 1-2 cinnamon sticks if you wish.

  3. Beat the eggs with the sugar, using a mixer, until fluffy (4-6 minutes). Add the yogurt and fold.

  4. In a bowl, mix the flour, semolina and baking powder. Add the flour mixture to the mixer and mix thoroughly.

  5. Finally, add the olive oil.

  6. Spread the mixture in a baking pan and bake the cake for 45 minutes until it gets a nice golden colour.

  7. Remove the cake from the oven and while the cake is warm, pour the cold syrup over the cake with a ladle.

Wait until your homemade revani has cooled - if you can resist the temptation! Serve a generous piece of your Greek dessert with some vanilla ice cream.
