The thin, crispy regañas are the perfect biscuits for your tapas table!
This delicacy has over a thousand years behind it, and was originally eaten by, for example, sailors and other people traveling long distances. Due to their very low water content, these biscuits can last a very long time!
They are best eaten with either pâté, tapenade or cheese, or you can dip them into soups, stews or tapas dishes.
They are made from flour, water and the "mother mass", which is yesterday's dough that has been allowed to sit and ferment a bit. They are rolled out to a thickness of approx. 1 mm, and then they are baked!
In this version from La Chinata, delicious, high-quality Spanish olive oil has also been added.
