Mustard is a versatile raw material that can be used for an incredible number of things!
Everything from mustard dressing, mustard sauce, marinades, as a side dish, in stews... yes, the possibilities are many!
You might know mustard from a good meatball meal, a hot dog, or a glass of mustard herring?

What is mustard?

Mustard comes from a plant that has long stems, narrow angular leaves, fine little yellow flowers and small, elongated pods with the mustard seeds inside. In Europe alone there are as many as 7 native species of mustard!

Mustard comes in countless varieties, and can be both strong mustard such as Dijon mustard, or it can be a milder variety, preferably sweetened with sugar or honey. The latter is done a lot in the north, such as Sweden or Denmark, for example.

Mustard also likes to grow wild in nature. In some places so much so that it is called a weed!

Why did you start eating mustard?

Mustard has been part of the dining table for many years, both in Denmark and pretty much the whole world, as it is easily grown in the European and Asian climates. This makes it a cheap and easily available raw material, which is also healthy!

Mustard is full of vitamins and minerals such as selenium, magnesium, calcium, potassium and omega 3 and 6, so just eat away at the delicious yellow snack!

How is mustard used in cooking?

Mustard is used in many different ways in cooking. Most typically as whole grain or crushed in some form of liquid, such as vinegar, water, grape juice or wine.

In some places, such as in England, you crush the mustard seeds completely into a fine powder before mixing it with the desired liquid.

In France, the whole grains are typically crushed into smaller, but still coarse pieces, in a mixture of grape juice and wine.

In India, whole mustard seeds are often used as a spice, where they are fried in oil together with other hot spices. Meat or pulses and tomato or coconut milk are typically added to this.

In Denmark and other parts of the Nordic countries, a mix of three types of mustard grain is often used, namely white mustard, black mustard and Sareptas mustard. Black mustard comes from the cabbage family, white mustard grows as a weed in the Mediterranean and Sarepta mustard is grown especially in the area of ​​Sarepta in Russia.

It was actually the Romans who started to discover mustard, but the tasty grains quickly spread to France, among others in the Dijon area as one of the first, and then gradually to the rest of the world. Mustard came to Denmark at the end of the Middle Ages.

What can you use mustard for?

You can of course use mustard as a side dish for all kinds of dishes, but a great way to use it is in a good mustard dressing!

It is easily made by mixing a good oil, a large spoonful of nice mustard, a little pinch of sugar and salt, a little lemon juice and a little freshly ground pepper. The mustard dressing is well emulsified, either with the help of a spoon or by pouring it into a container with a lid that can be shaken. It is then ready to serve, perfect for salads and other fresh dishes!

You can also use it as a dressing in pasta salad or as a vinaigrette for smoked salmon or smørrebrød.

Another wonderful use of mustard is in marinades for meat!

Mix a large spoonful of your favorite mustard, preferably one with a bit of edge and kick, and a large spoonful of honey. Feel free to use equal parts of each. Add chopped garlic and sage (or other fresh herbs) to this mixture, and you now have the most wonderful flavorful marinade, perfect for pork or chicken!

This marinade is particularly suitable for grilled food, as you get an extra good roast crust due to the sugar content in the honey, which makes the meat nicely caramelised. Yum!

A final classic use is a good mustard sauce. It can be made in many ways, but typically it is a baked sauce to which a good amount of wonderful mustard is added. Baked gravy is made by melting butter in a saucepan, whisking in flour and then adding milk until the desired consistency is achieved. The sauce is cooked through to remove the flour taste, and finally the desired amount of mustard is put in. Voilá!

Mustard sauce is often served with fish such as flounder or plaice, but can easily be used for many other dishes as well. It is also super good for classic sirloin steaks!

As you can tell, mustard is far more than something you eat on a hot dog. Mustard is a refined and versatile edible that is loved by people all over the world! And it's also healthy!
