Chalkidiki olives are large, light green, oval-shaped Greek olives and are often harvested while still young. Usually processed through salt water curing, which gives a firmer meat structure, with a full mellow taste with a little dryness and a little pepperiness in the taste.
Often referred to as Halkidiki, the Halkidiki olive grows exclusively in Greece in the Chalkidiki region adjacent to Mount Athos. Chalkidiki or Halkidiki olives got their name from the place where they are naturally found in an area of Greece considered as the Central Macedonia area, which when translated means Halkidiki or Chalkidiki.
This Greek olive is also called the "donkey olive" because of its large size. Chalkidiki olives are excellent table olives with high quality and large enough to be stuffed with other food ingredients.
