Romesco sauce is a fantastic Spanish dip that can be used for most things!
It is typically made with tomatoes, peppers, nuts such as almonds and hazelnuts, onions, garlic, olive oil and vinegar. This gives a sauce which is both creamy and light, and which tastes round and mild with a pleasant edge from the garlic and vinegar. Yum!
This version from Espinaler is made without peppers, but otherwise you will find all the classic ingredients in this wonderful romesco!
Use the sauce for dishes with fish, light meat and poultry, or be creative and use it as a sauce for pasta dishes or on bruschetta. The possibilities are many, and the wonderful taste easily sets the imagination in motion! Welcome from Elena's!
