The fantastic fresh, cold, Spanish vegetable soup, Gazpacho, is wonderful on a hot summer day!
It is reminiscent of a good tomato soup that most people know, just more nuanced in taste due to the delicious variety of vegetables used!
As I said, the soup is served cold, preferably with a delicious piece of bread and a good glass of cold white wine!
Gazpacho can be used as lunch, as a starter or as a fresh dinner together with other small dishes.
Gazpacho originally comes from Andalusia, and like many other homely Spanish dishes, every household has their own version!
The classic arrangement of Gazpacho is in a deep bowl, with a little good extra virgin olive oil poured over in circles and finally a bit of chopped tomatoes and green pepper on top as garnish.
Here you get your Gazpacho in a glass bottle of 750 ml, which corresponds to approximately 4 portions.
But you can also close the bottle again with the screw cap and store the rest for up to a few days in the fridge.
