Grandma's marinade is a classic Spanish recipe that consists of vinegar, salt, garlic, red pepper and herbs. This marinade compliments the taste of the green olives in the most wonderful way!
Serve them in a small bowl on the tapas table, next to a cold beer or as an aperitif to satisfy the small hunger before the main course arrives on the table! Whoops!
These olives have stones in them, as it is important for many Spaniards that the stone remains in the olives! They help to keep the meat together in the marinade so that the olives do not break down, and it gives a good, authentic olive flavor that stays longer in the olive.
