Risoni, pastina, kritharaki, orzo… dear child has many names. Risoni is one of the most classic Greek pasta shapes, often used in soups, stews and salads. The shape resembles a grain of rice, hence the name Risoni, and it comes in three sizes: large risoni, medium risoni and risaki, which is the smallest.

A classic dish that includes risoni is Giouvetsi. The dish consists of a spicy, tomato-based sauce in which a delicious piece of meat is braised for hours. The meat can be either lamb, beef or pork, the most important thing is just that the piece is large enough to braise for a long time without it becoming dry. There are also faster versions of Giouvetsi which can for example contain fish, shellfish or chicken. Finally, risoni pasta is added, and the result is an aromatic, rustic and satisfying dish, where the meat is so tender that it can be pulled apart and the risoni soaks up all the wonderful sauce, so that you get sumptuous flavor in every mouthful.

You can also make a fresh, cold salad with risoni, where the cooked pasta is rinsed under cold water and put in a large bowl. Cucumber, tomato, red onion, olives and feta are added to this, as well as a wonderful homemade dressing based on olive oil, oregano and garlic, as well as a splash of lemon juice. You can advantageously add other greens such as peppers, baby spinach or delicious pickled delicacies, with risoni salad the only limit is your imagination!
