Follow these simple 5 steps to make your very own traditional Greek dip and wow your guests:

  1. Wash the cucumber thoroughly and grate on a grater, with the coarse edge.

  2. Let the water run off the cucumber and let it drain in a colander or strainer. Add salt and set aside while the liquid drains.

  3. Prepare the yogurt by mixing it with the Tzatziki mix and olive oil.

  4. Mix the cucumber into the yogurt and add the vinegar. Mix until completely combined and creamy.

Tip: Add extra garlic if needed.

  5. Refrigerate until ready to use.

Before serving, add 2-3 Greek olives on top of the tzatziki and sprinkle a few drops of olive oil over it. Then enjoy your homemade tzatziki, e.g. with some Greek pita bread !

Denne opskrift brugte jeg før 2003. Så var vi på Poros, hvor en græsk mutti lærte mig Grækenlands bedste tzaziki. 2 agurker rives groft, 1/2 spsk salt blandes i. Trækker og vrides for vand. 1 dl olivenolie, 5 fed hvidløg, en lille håndfuld dild, 1 spsk eddike. 1 spsk. Dijon sennep blendes og blandes i 1 kg græsk youghurt. Så tilsættes agurkerne og så er Grækenlands bedste tzaziki klar. Her er til 14 dage. kalí órexi
